Measuring and mixing have always been some of my kids' favorite kitchen activities. So I gave my daughter a whisk and let her mix the egg, sugar, brown sugar and milk in a large bowl.

Next, stir in the cooled, melted butter. Add the wet ingredients to the dry ingredients and mix to combine.

You can try this recipe with a variety of apples. Granny Smith are good as are any used in baking.

What is the secret to making moist muffins?

Brown sugar helps to keep moisture in a muffin and that is why I add it to this recipe. Also, the apples in this muffin recipe help keep the muffins moist.

How do I store apple muffins?

You can store the muffins at room temperature in an airtight container for up to 4 days. I like to put a paper towel in the bottom of the container before placing the muffins inside. You can also store these in a container in the fridge for up to 7 days.

I have made these many times, and they are a wonderful basic recipe that I can keep simple or jazz up if the mood strikes! I have been known to add raisins, craisins, and pecans on occasion. They always come out wonderful. Thank you!!

Send those little helpers my way as I always need some extra hands in the kitchen (both to cook & eat). As for these muffins. . .well. . .a couple sure would hit the spot right about now. BTW. . .so jealous of your apple tree. I live in the city and you are lucky to come across a blade of grass. . .a fruit tree. . .now that is as rare as a unicorn.

I adore apples, but oddly enough I've never made apple muffins. I've done cakes, crisps, pies and more... but never muffins! Not sure why that is, but seeing how nice and simple this is and how wonderful it is to do with kids, I think I'm going to have to give it a shot a little later in the season when our local apples are at their best. Cheers!
